Haven't tried this yet, but it looks amazing and it was about only $20 at the supermarket.
Recipe:
3 boneless skinless chicken breasts
2 cups of brown rice (can be substituted with wild or white rice)
1 can of cream of chicken soup (98% fat free)
1 carrot
3 stems of celery
1 onion
2 cloves of garlic
1 small bag of spinach (optional)
1 cup of water
Basil, oregano, garlic salt and pepper
- Pour brown rice in bottom of crock pot. Top with can of cream of chicken soup with water.
- Chop up carrot, onion, garlic, and celery and put on top of rice with chicken mixture.
- Sprinkle basil oregano garlic salt etc on both sides of each chicken breast and place on top of rice.
- Cook on HIGH for 4-6 hours or LOW for 8-10 hours. Before serving add bag of spinach and mix.
- Serve chicken over rice and sauce on top and enjoy!
